  • Stove top burner
  • Candy thermometer 
  • Medium sized pot
  • Cookie sheet or other low sided pan



  • 500 ml pure Ontario maple syrup, golden or amber grade
  • Small amount of butter, margarine or vegetable oil
  • Quantity of clean snow or ice finely chopped in a blender
  • Wooden  stir sticks


  1. Pack the snow or ice in the pan at least an inch deep
  2. Place the syrup in the pot and with the heat on high bring the syrup to a boil
  3. While heating put a tiny amount of the butter in. This will prevent the syrup from boiling over as it comes to a boil
  4. Reduce the heat as it comes to a boil but keep it high enough for a vigorous boil
  5. Boil until the thermometer reads 237 degrees Fahrenheit
  6. Pour the hot syrup directly from the pot, about two  tablespoons at a time, in a strip on the packed snow or ice
  7. Allow the syrup to cool for about 10 seconds then start rolling the syrup around the stir stick as it turns to taffy
  8. Once rolled, let the taffy lie on the snow for about 30 seconds to firm up
  9. Enjoy!
